Come taste pairings of local cheeses and chocolates with experts (and great enthusiasts!) Beth Chevalier from the Brattleboro Food Co-op, and Dar and John of Tavernier Chocolates. We will taste and pair four different cheeses and four different chocolate bars, as well as a cheese with our best-selling chocolate pate. This will be a delicious, fun, and informative event. Seating is limited so we will pre-sell tickets, but the cheese and chocolate will be flowing. And bonus: everything we taste will be available at the Brattleboro Food Co-op for future noshing!
You know about us, here’s a bit about Beth:
Beth Chevalier is the cheese department manager, and Certified Cheese Professional (yes, that is a thing), at the Brattleboro Food Co-op! Think sommelier, only cheese instead of wine)through the American Cheese Society. She’s been the department manager for five years, and before that she was the buyer, before that she was a cook. She has traveled far and wide to learn more about cheese, how it is made, and the people and animals who make it.
Beth sees her job of cheesemonger as that of storyteller. She tells the stories of the cheese; where it’s made, who makes it, what animals give their milk for it, and what tradition the cheese comes from. Beth is ridiculously excited about cheese, and the artistry and alchemy it takes to create it. Every day at her job she gets to eat cheese, try new ones and revisit old friends. One of the most fun things that the Coop does is to pair cheese with different accompaniments, and one of her personal favorites is chocolate. She rarely assembles a cheese board without including chocolate. The Coop offer cheese tasting classes periodically at the Co-op, and love talking cheese with customers during the course of our day.
